Using BCH’s Cook / Cool System we simulated a full-scale pilau rice production run to develop a process that balances authenticity with efficiency to address these challenges. 

The process involved:

  • Controlled cooking with even heat distribution → ensuring every grain is cooked uniformly, without sticking, breaking, or clumping.
  • Gentle mixing action → maintaining the integrity of each grain while preventing clumps and creating the ideal fluffy texture.
  • Integrated cooling → quickly reducing the rice to safe storage temperatures, preserving flavour and colour and minimising bacterial risk.

Over several days, our team carried out multiple trials, carefully adjusting key process parameters:

  • Cooking time
  • Agitation speed
  • Cooling duration

This approach allowed us to fine-tune the cook/cool system until results were authentic and repeatable and fully scalable for industrial environments.
